Gluten Free Pinhead/Steel Cut Oat Flapjacks

INGREDIENTS
• 200g Acovior Pinhead Gluten Free Oats
• 150g Butter or Dairy-Free Margarine
• 150g Brown Sugar
• 100g Golden Syrup (or honey/maple syrup for a different flavor)
• 50g Dried Fruits (like raisins, apricots, or cranberries)
• 50g Mixed Nuts (optional)
• 1 tsp Vanilla Extract
• A pinch of salt -
METHOD
1. Preheat the Oven: Set your oven to 180°C (160°C fan)/350°F. Grease and line a square baking tin (20cm x 20cm).
2. Prepare the Syrup: In a saucepan, melt the butter, brown sugar, and golden syrup over low heat. Stir occasionally until the sugar is completely dissolved.
3. Mix the Ingredients: Remove the saucepan from the heat and stir in the vanilla extract and salt. Add the gluten-free pinhead oats, dried fruits, and mixed nuts (if using). Mix well until all the oats are coated with the syrup mixture.
4. Bake the Flapjacks: Pour the mixture into the prepared baking tin and press down firmly with a spatula to level the top. Bake in the preheated oven for 20-25 minutes until golden brown at the edges.
5. Cool and Slice: Allow the flapjacks to cool in the tin for about 10 minutes before cutting into squares or bars. Once completely cool, remove them from the tin and store in an airtight container.
